Smoked Salmon

Opened smoked salmon lasts only 2 to 3 days in the fridge, unopened to the use-by date. The cold chain matters because of Listeria.
Opened only 2–3 days — the cold chain decides
Smoked salmon is a delicate food with a real safety aspect. The usual cold-smoked salmon is not cooked through but only smoked at low temperature and salted. Unopened and vacuum-packed it keeps in the fridge to the printed use-by date, often one to two weeks. After opening it should be eaten within two to three days.
Because the fish flesh stays raw, unbroken refrigeration is decisive. Smoked salmon should be kept consistently at 32 to 39 °F and should not warm up for long on the way home. Every break in the cold chain speeds up the growth of germs considerably. Opened packs are kept airtight in the coldest part of the fridge.
The most important reason for caution is the bacterium Listeria monocytogenes, which can multiply even at fridge temperatures. For healthy adults the risk is usually low, but pregnant, older and immunocompromised people should avoid raw smoked salmon or eat it only well heated through (for example in a hot pasta sauce). This advice matches the guidance of the USDA and FDA.
Hot-smoked salmon, cooked through at higher temperatures, is somewhat less delicate but should also be kept chilled and used promptly. To keep smoked salmon longer, you can freeze it — the quality suffers a little, but in terms of safety it is possible. Once thawed it should be eaten promptly and not refrozen.
With smoked salmon do not rely on looks alone — smell and feel it. Fresh salmon smells mildly smoky and looks a strong orange-red with a light sheen. A sour-sharp, ammonia-like or clearly fishy smell, a slimy surface or a gray, dull discoloration mean: do not eat it. With raw fish, when in doubt always toss it — especially because of the Listeria risk.
Shelf life at a glance
Opening state and type set the limit:
| State | Shelf life |
|---|---|
| Unopened, vacuum-packed | to use-by date |
| Opened, chilled | 2–3 days |
| Hot-smoked, opened | a bit longer, promptly |
| Frozen | 1–2 months |
Store it right
This keeps smoked salmon safe:
Chill throughout — at 32 to 39 °F in the coldest part, do not break the cold chain.
Opened 2–3 days — use up promptly once opened.
Seal airtight — cover an opened pack well.
Mind at-risk groups — pregnant and immunocompromised only heated through.
Common myths
A few myths surround smoked salmon:
Only partly — cold-smoked salmon stays raw and remains highly perishable.
No — Listeria multiplies even at fridge temperature.
Better not raw — because of the Listeria risk, only well heated through.
The smoking process in classic cold-smoked salmon mainly serves flavor, not preservation — unlike in the past, when heavy salting and smoking preserved fish for weeks. Today's smoked salmon is mildly salted and stays raw, which is why refrigeration and quick use after opening matter so much. It is worth a look at the packaging too: if it says „cooked" or „hot-smoked," the fish is a little less delicate; „cold-smoked" or „cured" means raw fish with a correspondingly short shelf life after opening. Do not break the chilling on the way home either — on hot days a cooler bag helps keep the delicate product from warming up. When in doubt with raw fish, caution always wins: better to throw it out than take a risk.
