Why real maple syrup belongs in the fridge

Unopened maple syrup keeps practically indefinitely thanks to its high sugar content — stored cool and dark it easily lasts years. After opening things change: real maple syrup, unlike artificial sugar-based syrup, contains natural components and a little more water. In the air and at room temperature, mould can therefore form on the surface over time. So opened maple syrup belongs in the fridge, where it stays fresh for about a year.

The difference from ordinary "pancake syrup" or imitation maple syrup matters: those are usually sugar syrup with flavouring, contain preservatives and keep well at room temperature even opened. Real maple syrup is a natural product and more delicate. A glance at the ingredient list shows what you have — if it says only "maple syrup," it is the real, refrigerate-after-opening product.

If mould does form on real maple syrup, it is no cause for panic but calls for care. In many countries the traditional advice is to skim off the mould, briefly boil the syrup, skim the foam and pour it into a clean container. To be safe, though, it is better to discard a clearly mouldy syrup — especially with larger amounts of mould. For everyday use the rule is: refrigerate it, and the problem does not arise in the first place.

If you use real maple syrup only occasionally, buy it in smaller bottles so it does not sit in the fridge all year after opening. The colour tells you something too: lighter syrup tastes milder, darker syrup richer and more caramel-like — but the grade has no bearing on shelf life; cool storage after opening is what counts.

How do I spot bad maple syrup?
