Heavy Cream

Opened heavy cream keeps 5 to 7 days in the fridge — its high fat lasts a little longer than milk. Ultra-pasteurized keeps longer unopened.
A short window once opened
With cream, the type matters a lot. Regular pasteurized heavy cream keeps in the fridge until its printed date and, once opened, stays good for about five to seven days — its high fat content (around 36 percent) makes it a touch more robust than milk. Ultra-pasteurized (UHT) cream keeps unopened for weeks to months, but once opened it too lasts only about a week refrigerated.
Sour cream and crème fraîche keep a little longer after opening thanks to their higher acidity — often a good week or more. The acid slows bacteria, so these types are hardier than sweet cream. In every case: work cleanly, always use a fresh spoon, and store the carton well sealed at the back of the fridge, where it is coldest — not in the door.
Unlike shelf-stable dairy, cream is not one to stretch generously past its date. The high fat and protein content is a good breeding ground for bacteria. Rather than relying on the date alone, give it a quick smell and look before using — if the cream curdles or smells sour, it goes.
How do I spot spoiled cream?
Spoiled cream gives itself away quickly:
Sweet cream should smell neutral and mild. A sour, sharp smell signals spoilage.
Curdled flakes or a thick, lumpy texture in sweet cream are a clear stop signal.
Discolouration, spots of mould or yellowish rims around the carton mean: discard it.
Add a splash of cream to hot coffee or tea. If it stays smooth it is fine; if it curdles at once, it has soured. With whipping cream the whip test tells you a lot too: if it still whips to firm peaks, it is fresh. If it stays liquid or separates into fat and whey, it is past its point.

Store it right
This keeps cream fresh as long as possible:
Chill at the back — the coldest spot in the fridge, not the door.
Seal well — cream otherwise picks up other smells and dries out.
Clean spoon — never dip used cutlery into the carton.
Freezing works — cream freezes; thawed it is great for cooking.
Common myths
A few myths surround cream:
Only unopened. Once opened it keeps just about a week, like fresh cream.
Not necessarily — cream that is too warm or too low in fat whips poorly too. Smell and curdling decide.
It barely whips afterwards, but is perfect for cooking and sauces.
Leftover cream need not go to waste: frozen in ice-cube trays, you always have single portions ready for sauces, soups or coffee. Whipped cream can even be pre-frozen in small dollops and set on desserts later. If you often need only small amounts, keep shelf-stable UHT cream in stock and open just one carton at a time — that way an opened tub less often ends up unused in the bin. Fresh cream, by contrast, is best bought when you will use it soon.
