Baileys

Baileys and other cream liqueurs keep about 6 months once opened. Despite the alcohol they carry a date — because of the cream.
Cream liqueur: the exception to the alcohol rule
Baileys is the perfect counter-example to the rule "no date above 10 percent": at around 17 percent alcohol the Irish cream liqueur would legally be exempt from a best-before date — yet it carries a printed one anyway. The reason is the cream: it makes the drink perishable, so the maker voluntarily states a shelf life of about two years from production.
After opening, the maker recommends enjoying Baileys within about six months. The alcohol and sugar partly preserve the cream, so refrigeration is not strictly required but is advisable — in the fridge the liqueur stays fresh and creamy longer. It should be protected from heat and direct sunlight in any case.
A cream liqueur has spoiled once the cream has curdled: it separates, turns thick and lumpy, smells sour and no longer tastes smooth. This can happen if the bottle stood too warm, is too old, or came into contact with acidic juices. Such a liqueur should be discarded — no amount of shaking helps here.
A practical pointer is everyday use: if you only use Baileys occasionally for a coffee or dessert, buy the small bottle so it does not sit in the cupboard beyond the six-month window after opening. And if you mix a creamy cocktail with fresh cream or milk yourself, always make it fresh rather than leaving it standing — the mix spoils far faster than the plain cream liqueur from the bottle.
How do I spot bad Baileys?
A cream liqueur shows its state clearly:
Curdled, lumpy cream is the clearest sign. Then discard it.
If the liqueur turns thick and viscous rather than creamy and pourable, it is past its point.
A sour smell or clear darkening shows spoilage.
Drop a little Baileys into a glass of water or a hot coffee. If it blends in smoothly and creamily, the cream liqueur is still good. If it forms flakes or small lumps, the cream has already curdled — then the bottle should be discarded.
Shelf life at a glance
Unopened and opened follow different timelines:
| State | Shelf life |
|---|---|
| Unopened (maker's figure) | about 2 years from production |
| Opened, refrigerated | about 6 months |
| Opened, unrefrigerated | shorter, take care |
| Curdled | discard |
Store it right
The right storage keeps Baileys creamy longer:
Refrigerate after opening — not required, but advisable; keeps the cream liqueur fresh longer.
Cool and dark — protect from heat and sunlight, which spoil the cream faster.
Seal tightly — protects against odours and drying out.
Do not leave with anything acidic — fruit acid makes the cream curdle.
Common myths
A few myths surround cream liqueur:
No — the cream limits shelf life. That is why it carries a date despite the alcohol and keeps only about six months once opened.
Not strictly, but in the fridge it stays fresh far longer.
No — once the cream has curdled, shaking does not help. Then discard it.
Baileys heading toward its date is still easy to use — in coffee, over ice cream, in desserts or in baking. If you mix your own with cream, always do so fresh and chilled, and use it up promptly.
